Divorced Dad Needs Easy Recipes

I'm divorced and when my daughter stays with me for a night or a weekend I'm never sure what to cook - an area where I have little expertise - so we always end up eating out. But I want to teach my pre-teen good eating habits that she can carry with her through life.

Any men out there have easy recipes they can suggest for me? I'm open to anything at this point!

Getting my kids to eat fish is always a challenge. Here's a quick recipe that has worked well for us. Prepare fish sticks as per the package directions. Create a delicious sandwich with the cooked fish, cheese, mayo/tarter sauce, lettuce, tomato - all on a toasted english muffin. Yummy!

Here's a favourite in our house. We call it 'Scrambie Sambie' (which is short for a scrambled egg sandwich.)
Scramble eggs and then serve in a hot dog or hamburger bun. You can add a variety of tastes for extra flavour, i.e. grated cheese, salsa, herbs, or onion. Whole wheat/whole grain buns can be found in any grocery store.

I was in your boat for a time. I listened to my daughter (for a time) and realized everything she wanted was ketchup-based. Sometimes they try to play mom off against you, but you'll figure her out. Mac and cheese is one idea; also try chicken, specialized rice (nothing spicey. Getting her to help also worked for me.
