
Turkey Meatball Pasta
Ingredients
- 1/2 lb lean ground turkey
- 1/4 ea chopped onion
- 1 clove garlic, minced
- 1/4 cup bread crumbs
- 100% bran soaked in a little water to soften
- 1 tsp dry oregano
- 1/2 tsp salt
- 1 ea egg
- Pasta Sauce
- Pasta (whole wheat or white)
Instructions
Make meatball mixture
- Combine turkey, onion, garlic, bread crumbs, oregano, salt, egg in a bowl
- Soak the bran flakes into a little bit of water to soften them (makes a paste)
- Add the bran to the rest of the ingredients
- Form meatballs from the mixture
Poach Meatballs
- In a frying pan, add about 1/2 inch of water, bring to a boil
- Add meatballs
- Cover and cook for about 10 minutes
- Add meatballs to your pasta sauce
- Continue cooking for about 45 mins
